A smashburger is a beef patty pressed onto a scorching hot griddle, giving it a crispy crust and a bold, intense flavor. The method began in Midwest diners in the 1950s, especially in Oklahoma. At Bill’s Hamburgers, cooks smashed meat with onions on the grill, a simple move that grew into an iconic style.
